cheese and mushroom chicken

The real name for this recipe is Gruyere Chicken, taken from the "Quick and Short Chicken Recipes" book. Best eaten straight from the oven, serve with garlic bread :D.

Ingredients (agak-agak):

Chicken breast fillet and flattened
Plain flour for dusting (light coating)
Olive oil for frying
Button mushroom (sliced)
Spring onions (daun bawang)
1/2 cup of cream
3/4 grated Gruyere cheese/Swiss cheese (I used Swiss cheese)



Method:
1. Dust the chicken with flour. Fry the chicken breast until cook and golden brown.Then transfer the chicken to a baking tray cover with foil.
2. Stir fry mushrooms and spring onion until soft. Add in the cream and bring to boil. Reduce the heat and simmer for 1 minute until the cream reduces slightly. Season with salt and pepper.
3. Spoon the cream sauce over the chicken and top with the cheese.
4. Place the chicken in the preheated oven until the cheese melts. Then serve.
