10-minute post: The word that keeps on emerging

It has been awhile since I wrote something interesting than cooking ya. Maybe I should change the header of this blog to, "Makan-makan in Brisbane". Honestly I have many things to write, but I should adhere to my priority, to write and compile my first and foremost "novel" so that all of us can go home for good as soon as possible. Why did I said first and foremost though this is not my first thesis. I found writing this thesis is soo challenging, interesting, time consuming, and sometimes daunting. There is a time I can't look at the chapter that I was writing, at all. Rasa nak muntah pun ada. And there are some times I feel like laughing at what I have written, rasa macam tak ilmiah langsung. Well I don't have any other option, but to finish writing this novel, and hope I could write something that is novel enough.

Noticed lately on my friends' wall who are on the same boat with me, I mean literally, this one strong word.
Procrastinate.  And the definition:
"To put off doing something, especially out of habitual carelessness or laziness"
"To postpone or delay needlessly."

Aiyah... I guess I am not the only one laaa... though this is a negative vibe, but can't help feeling a little bit relieve. Ehhh...or should I not accept this at all?!!

...alrite...I have exceed the allocated 10 minutes for this entry. Got to start working right away, no more procrastinate for today.

p.s. while I am typing this entry, adik is sitting at atang's desk, punching the keyboard on atang's laptop, immitating me. I was concentrating on writing this and not realising her climbing up atang's chair until I heard the tapping sound coming from my right...ahahahhahah... when I looked at her, she responded, "adik work nih..." owwhhh and that sounds so familiar too

The day I have to grill the chicken

It is officially autumn. Sejuk-sejuk nie, best meals to cook and eat are steamy soups or anything with black pepper in it. I prefer clear soup than white soup, rasa lagi authentic with the rempah and onion taste.Soups or broath will surely keep us warm in this chilly weather.

So one day, I thought of preparing chicken soup for dinner. I know kids will love it, but not atang. Although chicken is atang's fav, he still has a few dishes that I need his permission to cook. Bukan ape, kang penat2 masak tgk atang makan tak berselera, kita pun hilang selera. Although he will eat it, tapi tak beria-ia laaa...And as expected, when I told him that I wanted to cook chicken soup for dinner, he said,"Ala....", but then he said, " masak laaa...atang makan je..." ahahhahah... talk about reverse psychology kan. Sape nak masak camtu, although teringin sangat nak makan nasi panas-panas dengan sup ayam yg pekat.

Anyway, since I have chicken drumsticks and wings in the freezer, nak masak sup pun macam kureng sikit kan (pujuk diri sendiri), but best for grilling. So I immediately googled for recipe. And this recipe caught my attention:

Bahan-bahan:
8 ketul drumstick
1 sudu besar mayonis
1 kiub ayam
1 sudu besar kicap manis
1 sudu besar sos tiram
Lada hitam secukupnya-tumbuk
2 ulas bawang putih-tumbuk
1/2cm halia-tumbuk

Cara-cara:
1.Perap dengan semua bahan-bahan di atas dalam 1/2 jam. Kemudian bakar. Lagi lama perap, lagi sedap. 


For a balance diet, I prepared cold salad and baked some potato together with the chicken. The kids loved it, atang tak payah citer la kan..he practically beaming, "sedap nie yang..." Well, I am happy when they are happy :D (tapi satu hari den nak masak jugak sup ayam pekat...tak kira hehehehe).

Yaya with her Goliath Stick insect: Week 1

Yaya came home yesterday with a bag containing some gum tree leaves (eucalyptus tree) and a small transparent plastic bottle in it. "Mak mak.... I have a stick insect...look"....and she started giving me instructions and an a piece of paper describing what she has to do with it.

"Your child has been given a live stick insect egg that could hatch over the next few weeks. Stick insects are fun and easy to care for, just follow the simple instructions below"...

First we need to transfer the egg to a bigger container and provide a good ventilation. Done
Then place a moistened tissue next to the egg to prevent from drying. Done
Next...wait for the egg to hatch within 3 to 4 weeks.


Lets see what will happen next week.

Nasi ayam cendawan ala-ala claypot

Sempat try resepi baru hujung minggu baru nie. Takde claypot, jadi masak nasi dan lauk asing-asing. Masak nasi macam biasa, cume ganti air dengan stok ayam (bancuh satu kiub stok ayam knorr dengan air cukup2 untuk masak nasi). Lepas tu hidangkan lauk ayam dengan nasi panas-panas....sodap.... hehehe

Nasi Ayam Cendawan (claypot)

Bahan-bahan ( 3-4 orang makan ):
1 cawan beras
1 1/2 air rebusan ayam
500gm ayam (potong kecik2)
1 sudu besar lada hitam (tumbuk)
1 sudu besar kicap pekat
5 atau lebih kuntum cendawan hitam- (rendam hingga kembang dgn air panas) - (den pakai cendawan  
         shitake)
2 sudu besar sos tiram
1 sudu besar kicap pekat manis
Minyak untuk menumis dan 1 sudu besar tepung jagung (bancuh dgn sedikit air )
2cm halia dan 2 ulas garlic (tumbuk)
Sedikit hirisan daun sup, daun bawang, bawang goreng dan sedikit minyak bijan

Cara-cara:
Perap ayam dengan bawang putih, halia, kicap pekat & manis, sos tiram, lada hitam dan cendawan. Panaskan minyak dan tumis ayam yg diperap hingga masak dan tuang air bancuhan tepung jagung.
Setelah pekat, perisakan dengan garam, ketepikan.
Panaskan claypot (refer glossary), masukkan beras dan air rebusan ayam, biarkan nasi masak. Pastu perlahan kan api dan tuangkan ayam tadi kat atas nasi dan taburkan smua daun, bawang goreng dan percikkan minyak bijan..



p.s. dah siap2 buat cili potong dengan kicap, tapi lupa pulak nak hidang...dan abis makan baru teringat, patut la rasa kureng aje masa makan. tapi apa-apa pun licin...hehehhehe

10-minute post: A quick observation in the library

I am now at the library. Since this morning been writing about the outcome of the data analysis, eyes on the screen for a long period of time. And when my back and neck started to show the strain, I looked up and saw...around me, ONLY opposite gender sitting at the nearest cubicles/desks around me. Looking further, I can only see 1 woman out of 4 man in the vicinity. Wow... this is rather surprising. This is unlikely in Malaysia, well to be specific at a few institutions library that I have been too. I don't have any hypothesis to ponder. Just a mere observation.

A melancholy story

This year is our last year in Brisbane. Though we are looking forward to come home for good, but deep down we feel sad to leave our current home, the place, the city that we have resided for 3 years. 3 as a number sounds small, but when we decompose it into the number of months in a year, the number of weeks in a month, the number of days in a week, the hours in a day, the minutes in an hour, the second in a minute and so forth, it feels like you have been here for such a long time.

But am not referring to the duration as something that we want to leave behind or resentment, but looking at the value in it. There are so many things happened either to me, atang and the family as the whole unit. So many challenges that we have faced, so many fond and bitter memories that we will always cherished (well at least to me, because I am the sentimental type) and so many decisions we have to make in order to survive in this foreign land. Although we have been here for 3 years, I still feel it strange, and nothing close to my heart accept the place where I was born. Like the popular Malay saying, "Hujan emas di negeri orang, hujan batu di negeri sendiri, baik lagi negeri sendiri."

One of the greatest challenge that I have to face is cooking. Before I came here, cooking is something that I treat as a task. Honestly, I started to cook after I got married. Before that I only help in the kitchen. Ok ok..I should make this straight. Before I got married I know how to cook nasi goreng,mee goreng, ikan goreng, ayam goreng and simple dishes. Tu tak kira laaa...hahahahahha.... What I am referring to is, cooking the complete meals for your own family. Even when I got married, whenever I don't feel like cooking, well, it's not a big decision to make. It is in fact an option and can easily substitute with other choice like for instead buying/tapau (how I miss saying this word) food, eat out (eh sama laaa), eating at your siblings homes and calling mak in the weekend and ask her "what's cooking mom?"....ahahhahah...... ok...over emphasis. But it is true. So when we came here, it is the most difficult obstacle that I have to face. What I don't like most is to plan what I want/need to cook for the whole week (well at least), because we can only do shopping on weekend, plus can only buy chicken and meat at only a few halal butchers around Brisbane. Buying things in a large amount, squeezing them into the freezer, hopefully it will covers for two weeks meals. Plus it tested my planning and management skill. Yes...am not a spontaneous person. I must plan what I want to do even for just for a few hours. I hate impromptu things.

Anyway, back to the cooking issue. Here, I have no choice but to cook. My first year here is worst, because at that time we didn't explore much, and didn't know that there are a lot of halal places around Brisbane. The only places or food that we frequent are Kebab outlets. Nasib baik kebab kat sini sedap, so we did enjoy eating them, eventhough on every weekend. So I have to improve my cooking skill to satisfy the craving of the family (ok...I admit my craving). I am lucky that looking for recipes is now as easy as A, B, C. I would like to say thank you for all the people who shared their recipes on the web. Gradually, cooking has become an obsession...ok that is too strong word, ahahhaha...it downgrade the purpose I am here....hmmm.... ok let me rephrase. Gradually, cooking has become a hobby. I enjoy cooking (oowww suddenly the word reminds me of my research). Once a resentment has became a pleasure. Moreover, cooking is a stress reliever. And searching for recipes has become a favourite past-time activity (though sometime I browse during my working hour). I should extend my gratitude to my family for putting up to all this, although I know sometimes it was not that good hahahahha... because without them I will never improve my cooking skill. Kadang-kadang terasa untuk pencen dan jadi suri di rumah sepenuh masa aje...ahahahahha... is that possible? Maybe not in near future laaa... someday...hmmm... I have an aunt who once wanted to do the same thing, quit her job and open a nasi lemak stall. Her ayam goreng rempah is to die for. I wonder when she will finally do it.

OK laaa...dah panjang sangat nih. Bila ada mood nak nulis/merepek kat sini, ini la jadinya...

To add to my recipe collection, I tried making Roti John weeks ago. After browsing and researching here and there (cooking is a research too tau), I came up with my version of Roti John (basically I referred to MamaFami's fotopages, and improvised a bit). For those who is not familiar with Roti John, it is a bun fried in omelette sometimes filled with meat or sardines and is a popular pasar malam (hawker) food in Malaysia.
My Roti John recipe:

Ingredients:
Brown onion, diced
Minced meat/chicken/mash sardines
Ground black pepper
White pepper
A little bit of cooking oil
Salt to taste
Eggs (1 egg = 1 bun, so the number of eggs is equal to the number of buns u use)
Hot dog/burger buns
Mayo, ketchup or chilli sauce
Some slice cucumber

Method:
1. In a non stick pan, saute the onion with a little bit of oil.
2. Add the minced meat, ground black pepper and fry until cook. Add salt to taste. Remove from heat.
3. Cut the buns into half (but don't cut through, leave the two half still intact).
4. Beat the eggs in a bowl, season with salt and white pepper. Then add the meat mixture.
5. Heat the pan. The pan should have a little bit of oil left from the frying, if not put a little bit of oil. Then scoop a ladle of the egg+meat mixture and pour it on the pan, evenly spread it to the shape of the bun.
6. Then press the two half of a bun on top the mixture. Leave it until the egg+meat mixture is cooked.
7. Flip the bun to brown the other side of the bun for, just for seconds. Then remove the bun from the pan.
8. Arrange some slice cucumber and squeeze some mayo, ketchup/chilli sauce.
9. Cut into half....and.... makan laaa...


p.s. I wonder how Roti John get its name? By whom, why and how..ahahahhahha...am so curious

a Rambling on a Gloomy day...

Mendung lagi today... with occasional rain.... don't know if I will miss this weather when I am back at home in Malaysia. owwwhhh home sweet home....

Today I brought adik to the office. It was a short visit. I need to pick up some documents from the boss and mail them by today. I need to do many things within an hour while atang was running an errand. So I told adik, "duduk diam-diam tau, mama work". And she just nodded her head. It was pretty quiet in the office, of late this is a normal sight. Most of the students residing near my workstation are busy completing their thesis this year. So less distraction is much appreciated. ahahahha... although the surrounding in the office is getting more peaceful, but I still can't work at my workstation, unless I have my ears plugged...ahahah..with earphones of coz. Owhhh suddenly the scene from "Bujang Lapok" came to my mind. I am referring to the scene when the three lapoks were trying hard to memorise their script for the following day audition. And the surrounding, the commotion from the neighbours, were soo distracting. So they plugged their ears with cotton balls. ahahahha...I was smilling while typing this. Takkan nak sumbat telinga ngan cotton balls kat ofis ye tak.

OK... dah jauh simpang nih...where was I. Ok...so adik came to the office. And I told her to be discrete so not to disturbed other research students. And I was busy printing, copying, etc. When adik is making a lot of noise, I told her to keep her voice down, because she kept saying in her loud voice," Mama...ngok nih...(mama tengok nih)..", "Mama, adik work" (while tapping on the keybord)... and whenever I said to adik..."dik...pelan sikit..", she replied, " Noooo...adik work"....ahahhahahah... tapi tu je laa... until she was braved enough to walk away from my workstation and walking to my colleagues'...ahahahhaha... then she ran to the printing room, stomping her feet walking back to my workstation, and ran to my colleagues...and talking to them...and...OK, she was getting restless...

Luckily I managed to get everything done before she became more restless.

OK...Now we are back at home. Adik is watching "pen bob" (spongebob) and trying to sleep, it is almost her sleeping time. Den baru nak start keje... Today I have writing to do....loads of writing... yakin boleh :D

Sodap ...memang sodap...den dah order dua kali...siap bawak gi Oz Zoo aritu.. sampai kan lizard yg besar yg ada kat zoo tu pun cakap sodap (lizard makan sisa2 yg jatuh ke lantai) hahahhaha...lizard mmg besar2 kat sana...den risau aje dia memanjat kaki den, makan nasi lemak aritu mmg kurang kusyuknya...ahahhahaha

And our fun day ended...

Pheewwwwhhhh so exhausted both from the journey and the zoo adventure. Feel like resting and put my feet up for the rest of day. Wish I could read Cornwell book, been sitting on the shelf for months. But I have a good theory book to finish. Takpe fazid..tak lame je lagi...think positive...

Glad I have some soto left over and nasi lemak bought from the brisbane nasi lemak seller. We bought four nasi lemak for our lunch today, but still have two more packets. hahahahhahah...

OK...got to go. I had a very wonderful day today, spending time with love ones on this special day. And I am happy for today I received many happy and warm wishest from friends. Was surprised to see soo many wishes on my wall just now when I login to my fb. Thanks friends for the thoughts. Am totally speechless. So before I go to bed today, I must reply all the messages as a token of appreciation.

This is the first time I received a birthday card from all of my love ones in one card .... hehehheheh... yaya wrote (and at the same time reading them) the birthday wishes while atang supervise her. I was pretending not to hear anything although I was in close vicinity..ahhahahaha...

It's cheesecake time

It has been quite sometime after I baked the last cheesecake, and that was when I went back to Malaysia. When I went back home for data collection cum raya celebration, I brought 4 slabs of butter, 4 slabs of philly and 1 box of frozen blueberries, among other things. I have freezed the butter couple of days before departure, and wrapped them individually with old newspaper and packed them together with our clothes. Almost 16 hours of travelling, both land and air, door to door, until destination. When we safely arrived my parents' home, the butter were still hard. Alhamdullillah...was so afraid that the butter melt or worst turned bad. A good quality butter is expensive in Malaysia. I remembered a good friend of mine once told me it is so dear to buy one philly. Price wise, it's better to buy a cheesecake rather than making one back home.

But here, it is so difficult to buy a Halal cheesecake. I have tried one piece of Halal cheesecake at a friend's house, and I tell you, Kak Ida's cheesecake recipe can easily beat the one I tasted. Honestly, even my friend agreed.

So far I have tried only a few cheesecake recipes. To add to my collection, I tried this recipe yesterday.

Crust:
2 cups (200 grams) of graham wafer crumbs or finely crushed vanilla wafers or gingersnaps (process whole cookies in a food processor until they are crumbs)
1/4 cup (50 grams) granulated white sugar
1/2 cup (114 grams) unsalted butter, melted

(For crust, I used Kak Ida's recipe)
Filling:

32 ounces (1 kg) (4 - 8 ounces packages) cream cheese, room temperature (use full fat, not reduced or fat free cream cheese)
1 cup (200 grams) granulated white sugar
3 tablespoons (35 grams) all purpose flour
5 large eggs, room temperature
1/3 cup (80 ml) heavy whipping cream
1 tablespoon lemon zest
1 teaspoon pure vanilla extract

Topping:
1 cup (240 ml) sour cream (not low fat or fat free)
2 tablespoons (30 grams) granulated white sugar
1/2 teaspoon pure vanilla extract

Method:

New York Cheesecake: Grease, or spray with Pam, a 9 inch (23 cm) springform pan. Place the springform pan on a larger baking pan to catch any leakage while the cheesecake is baking. Preheat oven to 350 degrees F (177 degrees C) with rack in center of oven.

(I lined the tin with baking paper. This will help removing the cake after baking easily)

For Crust: In a medium sized bowl combine the graham cracker crumbs, sugar, and melted butter. Press the crumbs evenly over the bottom and about 1 inch (2.5 cm) up the sides of the springform pan. Cover and refrigerate while you make the filling.
(refer to Kak Ida's for crust preparation)

For Filling: In bowl of your electric mixer place the cream cheese, sugar, and flour. Beat on medium speed until smooth (about 2 minutes), scraping down the bowl as needed. Add the eggs, one at a time, beating well (about 30 seconds) after each addition. Scrape down the sides of the bowl. Add the whipping cream, lemon zest, vanilla extract and beat until incorporated. Remove the crust from the refrigerator and pour in the filling. Place the cheesecake pan on a larger baking pan and place in the oven.

Bake for 15 minutes and then lower the oven temperature to 250 degrees F (120 degrees C) and continue to bake for about another 1 1/2 hours or until firm and only the center of the cheesecake looks a little wet and wobbly. Remove from oven and place on a wire rack.

Meanwhile, in a small bowl combine the sour cream, sugar, and vanilla extract. Spread the topping over the warm cheesecake and return to oven to bake for 15 more minutes. Remove from oven and carefully run a knife or spatula around the inside edge of pan to loosen the cheesecake (helps prevent the surface from cracking as it cools).

Let cool before covering with plastic wrap and refrigerating. This cheesecake tastes best after being refrigerated for at least a day.

This cheesecake is very heavy, rich and creamy. Yummy indeed, but I don't like the smell of egg in my cheesecake. Probably the amount of eggs can be reduced. Other than that, you surely can't stop eating this, well if you have no problem with your diet...hahahahahha... I surely gained a kilo today, both due to this cheesecake and soto that I prepared for colleagues who came for tea today. Arrghhh nothing beats eating cheesecake and soto ayam with friends yaa...

OK...I have to complete a task tonight before call it a day. It's gonna be an early start tomorrow...no..not working... but taking the kids somewhere for a break. After all it's still holiday tomorrow.

Donut with chicken curry filling

And for tea... I made donut with chicken curry filling. I still have some chicken curry filling from the curry puff I made last week. So I prepared dough for donuts, I never expected that making donut is easy...really. I have prepared one batch, fry half of them for tea, and half-fried another half to keep in the freezer.


I told you I'm in the mood of cooking today. OK..back to data crunching tonight.

Beef stew

Yaya was helping me with the lunch (cum dinner) preparation. Ringan sikit keje den. Our freezer is almost empty, we only have some pieces of chicken, some beef and one ikan kembung. We already had 3 chicken meals in a row this week, so I decided to cook the beef. Malas pulak nak goreng sayur kan, and that's only leave me with one option. A soup/broth, a complete diet in one meal. ahahhahaha... And so I cooked....eh terlupa I have a sous-chef...



What did we cooked sous-chef??



This beef stew is my sistah's recipe. I tried to find the recipe in my hard drive, but couldn't locate it anywhere. I knew the ingredients, but not sure how much and whether I have everything. Anyway, I cooked it based on how much I can remembered it. So here is the recipe:

My sistah's beef stew:

Ingredients (sesedap rasa aaa):
Beef cut into cube. I used gravy beef (ada tulang-tulang sikit)
2 brown onions, diced
3 garlic, diced
Carrots, potatoes cut by yaya (hahahha... I mean cubed)
1 tomato, cubed
Mushrooms, green peas
1 cube of knorr's beef stock
3 tbspoons of olive oil
Water
4 tbspoon of all purpose flour (plain flour) mix with a little bit of water
ground black pepper and salt to taste

Method:
1. Heat the oil than saute the onions and garlic until translucent.
2. Add in the meat. Mix well.
3. Add in diced tomato and water, enough to cover the meat.
4. Cover the pot, and leave it until the meat is tender under medium heat.
5. When the meat are tender, add in the carrots, potatoes, beef stock, and pepper and salt to taste.
6. Lit it simmer under low heat, until the potatoes are cooked.
7. Add the flour mixture, mushroom and peas. Then let the gravy thicken.
8. Serve hot with plain rice or better with some garlic bread or toast.

And I said, "bukan buah la dek... sayur"
"ooooo...aaaa yoooor..." adik replied.

Adik insists that we called her "baby adik" everytime we called her dedek/adik/thirah....

"bibi adik laaa...bibi adikkk..." she would say while patting her chest.

A break... feel like cooking the whole day today

Had one whole day of discussion and data crunching yesterday. And last night we had nasi lemak for dinner, tapau punye, double thumbs up for the nasi lemak. After the dinner, all four of us cuddled together, in front of the TV watching Saw VI (the finale). At first I wanted to complete the data crunching, but adik was clinging to me all the time (missing me so much for leaving her one whole day)..so what the heck. Dah lama tak tengok movie, and surely I didn't want to miss the last of Saw. Thumbs up for Saw VI. But I still favor the first one. "Game Over".

OK...nak masak....right now yaya is peeling some carrots and patotoes. Yup, I have a kitchen helper now. So happy that she wants to help with the cooking. She hates doing the dishes though, so we appointed her as the "set-the-table" maid hahahhaha and "clean-up the table" maid after the meal. OK..nak masak ape today?

Oh yes... today is a public holiday in Australia. And the start of 1-week school break. We anticipated a busy weekend ahead.
